Cupcake Decorating Birthday

We were sitting on a sunny day in Costa Rica, Myself, my 10 year old twins and my little one thinking what we will do this year for her birthday. I’m very big on in-home birthday parties that are more personal, that I can do myself. An Idea to do a mini chef party came up and I loved it!!! It is not easy having a birthday party at home in February… but thank god she turned 5! That means it was time to teach the other moms to LET GO! I simply wrote drop-off encouraged and it worked like magic. I only had few parents, which I fed with Sushi and Mimosas… lets just say I didn’t hear them much :)

For the cake, I made a gluten free chocolate cake, my mom famous recipe. I also baked from same recipe 21 chocolate cupcakes in a silicon teacup. For the parents I baked vanilla gluten free cupcakes with my own icing and put the in the 2 carousels I have, best investment ever! Used those carousels so many times. Instead of hiring help, I asked my 10-year-old daughter and 2 friends to be my helpers, for them I ordered dark chocolate apron and ironed their name on it. Brilliant and cheap Idea, they were marvelous. They took everyone’s coats, Had the kids take their shoes off (winter birthday in home, yes I’m not that crazy to let them wear shoes in my home), they helped the girls decorate, wash their hands and so on. Each girl sat on the table next to a golden frame with her picture on it. Name tags. Inside the boxes there were stickers and markers to decorate the box. Once done there were Icing bags on the table, it is important to close those bags with those tiny rubber bands and I added a ribbon to make it nicer. This way the icing won’t come out from the top once they start squeezing it. Each girl had 3 clear mini cups of sprinkles, Mustache lips and pearls to decorate their cupcakes. When done they decorated 2 gluten free sugar cookies. After all this decorating, my wonderful assistants took the girls down to a fun photo-shoot while we were cleaning up. We served GF chicken tenders and GF pasta. For desert I served the Birthday cake with Pink Chocolate milk and the candy table was open for any sweet tooth!

Shopping List:

Gluten Free Chocklate Cake and Cupcakes

Ingredients

3 Eggs

1.5 cups sugar

¾ cups vegetable oil

½ cup cocoa powder

1.5 cups flour

1 tablespoon vanilla sugar

1 tablespoon baking powder

1 teaspoon Baking soda powder

1 cup cold Water

1 cup BOILING water

Mix all the ingredients BUT the boiling water and the baking soda in a stand mixer. Mix on medium speed for 3 minutes. (start slowly since it is very liquid). Once all ingredients came together start adding gradually the BOILING water and last but not least add the baking soda. Cake should look right now pretty liquid.

Bake for 10 minutes on 356 F and than about another 40 minutes on 305 F.
